mix flour, salt, pepper, butter and egg yolks in a bowl. Geadually add the flat beer, stirring constantly. Allow to rest, covered, in the refrigerator 3 to 12 hours. Just before using, beat the egg whites until stiff, and gently fold into the batter.
This batter is good for onion rings, vegies, and in Brent's notes, fritters.
