In a small bowl, whisk together yolks, mustard, vinegar, parsley, rosemary, salt and garlic. Continue whisking and slowly add oil in a stream. Until completely mixed. Let stand in refrigerator for 1 hour. Strain through a mesh to remove rosemary and parsley. While straining, press solids with the back of a spoon. Serve.
A great dressing for Endive Roquefort Salad.
