Title: Creamed Mushrooms with Dried Beef

Instructions

Brush and trim mushrooms, then slice and julienne them. In a saucepan or small skillet, melt 2 T. butter and add flour, stirring with whisk. When blended, slowly whisk in milk. In a separate skillet, melt remaining butter and add mushrooms. Cook until wilted and give up their liquid. Add sauce, dried beef and pimentos. Remove from heat and immediately add cheese, nutmeg and cayenne. Taste and add salt and pepper if desired. Serve on toast or toasted english muffin.

Notes

I used to love Creamed Chipped Beef on Toast as a child. Not sure how I feel about it now, but I may try it soon. I'm thinking of using prociutto or something like that instead of dried beef.
Anyone remember the alternate name for this?? The abbreviation is SOS!!
