Rinse and pat dry the chicken pieces. Brush with melted butter. Arrange in single layer, skin side down, on rack in large shallow baking dish. Bake uncovered at 375 degrees for 30 minutes. Mix mustard, onion, thyme and pepper. Remove chicken from oven, turn pieces over and spread mustard mixture over them. Return chicken to oven and cook for another 30 minutes.

Notes

Use whatever chicken pieces you want: all breasts, all thighs, mix and match!!
