Dissolve yeast in 2 Tablespoons of 105-115 degree water. Combine 1 cup water, milk, sugar and salt in bowl. When yeast is ready, combine the two mixtures.
Sift and gradually beat 2 cups of flour into mixture. Cover with cloth and let rise at 80-85 degree temperature for 1-1/2 hours or until it collapses back into bowl. Beat in butter. Knead in remaining flour.
Press dough to a thickness of 1/2 inch and cut out with greased muffin rings. Let stand on lightly greased baking sheet, sprinkled with cornmeal, until dough has doubled in size.
With spatula, transfer to 400 degree, well-buttered griddle. Cook until light brown. Remove rings after turning once. Cool on rack. If not to be eaten the same day, freeze at once.
