Combine the flour and baking powder in a small bowl and set aside.
In a large bowl, beat together well the ricotta, vanilla, eggs and sugar. Add the flour mixture and stir until combined.
In a large pot, dutch oven or deep fryer, heat canola oil to 360 degrees. Drop batter by teaspoonsful gently into oil and fry until golden brown. The balls will expand considerably while cooking. If you drop more than a teaspoonful, the ball will be too large and may not cook through.
Remove balls from oil with a slotted spoon and drain on paper towels until slightly cooled. Sprinkle with powdered sugar. Eat while warm.
