Instructions

In a bowl, combine flour, sugar, baking powder, salt and mustard. In an electric mixer, beat eggs for 2 minutes. Gradually beat in the yams, then the milk and butter. Add the flour mixture and stir until just combined. Cook, following the directions for your waffle iron. Serve with Pecan Butter.

Notes

These are great with the Pecan Butter, but they are pretty darned good with maple syrup, too.
This recipe can be cut in half also. Left-over waffles can be stored in the fridge and reheated in the toaster.
